For Calphalon, a brand under the ownership of Newell Rubbermaid, cookware is their game and their distinction from other products on the market is the using the anodizing process whereas competitors use Teflon. Newell Rubbermaid uses "hard-anodization," an electro-chemical process, to harden the aluminum that will soon be a pan or pot. This process turns ordinary aluminum into extraordinarily strong aluminum. Not only does this electro-chemical process make the aluminum ready for use in food preparation, but it also helps it to repel damage from scratching. So, Calphalon cookware pieces are incredibly strong and long lasting.
At first, this process might seem a little dangerous and not so appealing for your cooking needs, however the process is completely safe. You don't have to worry about contamination of your food from the pan itself. This brand of pans can take the heat and are also better than Teflon pans because nothing toxic comes off of them. The pores of the metal are filled in because of the "hard anodization" process, which results in a silky smooth surface and food which easily releases from the pans.
Even though Calphalon cookware's superior design renders it non-stick, no cookware is perfect in that regard, so there are still several tips that should be followed in order to ensure maximizing the no stick properties. One helpful step is to make sure to not cook chilled food in these pans. Usually leaving food out for as little as ten to fifteen minutes is enough to take the edge off. Also, when preheating the pans, do it over medium heat, not high. Aluminum conducts heat much more efficiently than normal pans do, so warming it on high will make the pan too hot, and it will not cool down just because you turn the burner down. It is so efficient that is takes only one or two minutes to pre-heat.
This last tip is important to recall when you're frying your favorite foods because they will burn if the temperature is set too high. Another tip is to always wash the Calphalon cookware which will help to make your investment last and to keep your family healthy and happy.
